Many of us know just how powerful ginger can be when we have upset tummies, nausea, bloating and gas. And anyone that has ever had a ginger chew knows just how well they work for nausea and upset stomachs. But they can be hard to find in stores and the homemade version is even better.
Ginger Chew Recipe
2 ½ cups water
½ cup grated and packed peeled ginger root
¼ cup honey
¾ cup cane sugar
Candy Thermometer
Saucepan
Parchment Paper (unbleached, compostable, chlorine free)
Coconut Oil (for greasing)
Peel and grate the ginger root. Measure into a half cup and pack it in. Place in a sauce pan and cover with 2 ½ cups water.
Simmer on low for an hour. Strain the liquid into a jar or bowl. Take a 1 ¼ cup of the ginger juice and pour back into the bowl.
Add in the honey and the sugar and stir to combine. Using a candy thermometer, heat on a low simmer until the temp reaches 255 degrees.
Don't boil it, just slowly heat it. Slowly the consistency will get thicker and thicker.
While it simmers, line a 7 by 4 (or something similar) glass dish with coconut oil, and then line the pan with parchment paper that is also greased with coconut oil.
Once it reaches 255 degrees, pour the ginger liquid into the pan to cool. Be patient and heat slowly, you don't want a big boil, but a low simmer.
Wait a couple hours and then either cut with a greased knife into little candy sized pieces. Or using greased scissors, cut into little pieces, that you then roll into little balls. I did balls about the size of two peas but its entirely up to you.
Using coconut oil to grease your hands, your tools, the pan, and the ginger balls as you roll them, makes this all so much easier.
I wrapped them in parchment paper and twisted the ends into little candy shaped bow ties and then stored them in a glass jar.
If they are stored properly they will last a year, but they will be more effective if they are used within a few months.
