Marshmallow Root Recipe

I love these! My family loves them too.

The marshmallow root is soothing and healing to the digestive system helping issues like heartburn and tummy troubles by coating it in its mucilaginous plant properties. The beef gelatin is also soothing for the digestive tract and is good source of collagen which helps skin, hair, nails and bones.

I used a more gelatin than necessary in this recipe, because I wanted them to be on the more nutritious side. You can use less gelatin to make them fluffier (and less dense) by using a 1/4 cup of gelatin instead of a 1/3 cup of gelatin. 

Marshmallow Root Maple Marshmallow Recipe

1 cup Cold Infused Marshmallow Root Tea

1/3 cup Beef Gelatin

1 cup Maple Syrup


In a glass jar, cover 1 tbs of marshmallow root powder with one cup of cold water. Let this infuse 4-6 hrs or overnight. When it’s done, strain into a clean glass jar and then measure one cup into the mixing bowl that you will be using to whip the marshmallows.


Place ⅓ cup of beef gelatin in the bowl of a stand mixer or in the mixing bowl that you will be whipping the marshmallows in, with 1/2 cup of the marshmallow root infusion.

Let this sit and bloom for 5 min.


In a saucepan, heat up one cup of maple syrup and the other half cup of marshmallow root tea. Using a candy thermometer for this part is really helpful, you want to heat the syrup to 240-245 degrees. Once it reaches this temp, it will overheat quickly, so keep an eye on it. If you don' t have a candy thermometer, drop a little in cold water, when it balls up the syrup is hot enough.

 

While the maple syrup is still warm, slowly pour into the bowl with the marshmallow infusion bloom while already mixing.


With a high speed mixer, mix until it’s frothy and whipped, about 10 minutes of whipping. And pour/scoop into greased (using butter or coconut oil) candy molds or a greased baking dish (9 by 9 works well) until the marshmallows are set.


Wait at least six hours before cutting the marshmallows or removing from the pan. They really take that long to set, even if they look and feel ready.


And a little tip, greasing all your tools, the sides of the bowl, the spatula, and the scissors you are going to cut the marshmallows with, really helps!
